- 長ネギ…1本
- ニンニク…5片
- 生姜…20g
How to make soup
- 沸騰したお湯に、鶏ガラ、もみじを血抜きのために2-3分茹で上げ、すぐに取り出し流水で洗い流す。
- 脱血された鶏ガラ、もみじを寸胴に入れて強火で6時間炊き上げる。

- 水400ccに対して、ジャガイモフレークを10g混ぜ合わせて、ポタージュスープを作る。
- 鶏白湯スープとポタージュスープを合わせる。
- 温めた丼に、かえし、スープを入れる。
- 最後に麺とトッピングを盛り付けたら完成。
