How to make "Honke Daiichi Asahi" Asahi-style Ramen
Ingredients for Honke Daiichi Asahi
・Water…10ℓ
・Pork knuckles...2kg
・ [Commercial Use] Pork Clear Soup (CP-BC6)... 2kg
・ Onion...500g
・Back fat...1kg
How to make Honke Daiichi Asahi
- Boil the knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.

History and origins
Founded in 1956, Honke Daiichi Asahi is located in front of Kyoto Station and, together with the neighboring Shinpuku Saikan, is said to be Ramen holy place for Kyoto Ramen. People from the station, the market, taxi drivers, and everyone else line up at this Ramen from 5:30 AM until 2 AM, and the restaurant makes 1,000 bowls of Ramen a day, and on busy days, as many as 1,500. It is said that founder Taguchi Yuji set up the Ramen with someone who learned how to make Ramen in China during the war, and the restaurant originally started out as a Western-style restaurant called Asahi Shokudo in 1953. It uses the same noodle factory and Shoyu as the neighboring Shinpuku Saikan, and as Taguchi was the owner of the land in the first place, it is said that the two restaurants may have had a connection.
In 1971, a branch opened in Kobe, Hyogo Prefecture, and Ramen here has been passed down as a Kobe flavor. Furthermore, it is said that there are nine "Daiichi Asahi" Ramen chains with branches in Tottori, Aichi, and Tokyo. Ramen is characterized by its sweet flavor, thanks to the generous use of Onion, and the restaurant's atmosphere is also cool.
