History and origins
Founded in 1913, Choju Udon Choju is a long-established udon restaurant that also serves Ramen. While it specializes in hand-made udon, it's a hidden gem, as all of Ramen, kishimen, and soba noodles are hand-made. Nagoya boasts a rich and unique noodle culture, including kishimen, misonikomi udon, Miso spaghetti, Taiwanese Ramen, Sugakiya Ramen, and medicinal Ramen. This noodle restaurant style isn't easily found when searching for Ramen, and it's a long-standing Nagoya staple. Customers choose their noodles when ordering. Their menu, which combines the initials of the noodles, includes "Uchu" (Space) which serves udon and Chinese soba noodles, and "Uso" (Lie) which serves udon and soba noodles, allowing customers to mix and match two or more types of noodles. They also offer three options for the temperature of their soup: warm, cold, or lukewarm. Finally, they choose toppings, such as tempura. When you combine the three levels of noodles, soup heat, and toppings, there are apparently over 100 different combinations.
