How to make "Shinkyo" Viet Cong Ramen
Introduction
This is a recipe that recreates the Viet Cong Ramen from "Shinkyo" a representative restaurant in Ichinomiya City, Aichi Prefecture.
The Viet Cong Ramen at "Shinkyo" has a slightly dark soup that has Light taste Shoyu flavor when eaten as is, but it also has a spicy Garlic lots of garlic, giving it a punchy taste.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of "Shinkyo" Viet Cong Ramen.
How to make "Shinkyo" Viet Cong Ramen
Shinkyo ingredients
Ingredients for Viet Cong Ramen
・Water…150ml
・Commercial chicken clear soup (CP-TC4)...150ml
[Ingredients]
・Salad oil...20ml
・Ground pork...30g
・Bean sprouts...100g
・Chinese chives...50g
・ Garlic oil...40ml
・Fried Garlic...8 pieces
・ Chili Pepper...40g
・ Oyster Sauce...30ml
・Salt...appropriate amount
・Pepper…appropriate amount
= Completed amount…1 serving
How to make Shinkyo
- Prepare the filling. Put the deep fried Garlic into Wok without adding oil and fry until browned on the surface.
- Add the bean sprouts, Garlic oil and stir fry. Add the pork and chives.
- Add the chicken clear soup stock to the soup to bring out its rich flavor, then bring to a boil and the soup is ready.
- Add seasonings such as Shoyu sauce and Chili Pepper. Place on top of the finished Ramen.

How to make it
- [For commercial use] Dissolve the chicken clear soup.
- Combine chicken clear soup and water.
- Pour the seasoning, lard, and soup into a warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Viet Cong Ramen is said to have been invented at "Shinkyo," which opened in 1969. It Ramen as a staff meal made with Garlic and Chili Pepper to combat overwork and summer fatigue. It was named after the brave image of the Viet Cong (National Liberation Front of South Vietnam) during the Vietnam War, which was ongoing at the time. However, as the conflict intensified, it was deemed inappropriate as a name for a food product, and it came to be explained as an abbreviation of "Best Condition Ramen." (However, if it were to be shortened, wouldn't it be "Bescon"?) Another similarly spicy Regional ramen is "Taiwan Ramen" in Nagoya, which uses ground meat, while Viet Cong Ramen is primarily vegetable-based. The restaurant's name, "Shinkyo," refers to the city of Shinkyo in Manchuria, China, where founder Inagaki was born. Meanwhile, there's also "Viet Cong Ramen Karaku," a restaurant in Gifu founded in 1975 that features Garlic garlic cloves. Both restaurants were established around the same time, and it's unclear which is the original Ramen.
