How to make Marunaka

  1. Soak the water, dashi Kombu, and Katsuobushi for about 10 hours, then cook for about 2 hours.
  2. Add the pork thighs that will be used to make char siu (roasted pork, roast pork, braised pork) halfway through cooking, then simmer for about 90 minutes and remove from the pot.
  3. Finally, add the tonkotsu soup stock to the soup to bring out its rich flavor, then bring to a boil and it's done.

History and origins

"Asa-ra," Ramen eaten in the morning, originated at Marunaka in Shida, Fujieda City, and is also called Shida-style Ramen, as it is a food culture found in neighboring cities such as Yaizu and Shimada. Shida-style Ramen is characterized by the availability of both hot and cold versions. Many people eat two bowls of Ramen at once, and it is customary for cold Ramen to be served after hot Ramen. It is a mild chilled Ramen without vinegar, and is said to be the origin of the term "morning ramen." It is said that a customer coined the term "morning ramen." For chilled Ramen in the summer, boiled noodles are rinsed in cold water before being placed in Ramen bowl. When chilled Ramen was first created, there were no refrigerators, so the boiled noodles were chilled and placed in room-temperature Ramen soup, rather than being chilled.
