Marunaka 's Morning ramen (hot) has a dark soup with a strong Japanese Shoyu flavor, just as it looks, so it goes really well with the refreshingly flavorful pork slices, making for a delicious bowl of ramen.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Marunaka 's Morning ramen (hot).
How to make "Marunaka" Morning ramen (hot)
Marunaka ingredients
Ingredients for Morning ramen (Hot)
・Water…10ℓ
・Pork thigh...4kg
・Commercial Tonkotsu Soup (CP=B8)...2kg
・Dashi Kombu (kelp for soup stock)...30g
・Dried Katsuobushi flakes...200g
=Completed amount…10ℓ
How to make Marunaka
- Soak the water, dashi Kombu, and Katsuobushi for about 10 hours, then cook for about 2 hours.
- Add the pork thighs that will be used to make char siu (roasted pork, roast pork, braised pork) halfway through cooking, then simmer for about 90 minutes and remove from the pot.
- Finally, add the tonkotsu soup stock to the soup to bring out its rich flavor, then bring to a boil and it's done.

How to make it
- [For commercial use] Dissolve the chicken clear soup.
- In 4 liters of water, [Commercial Use] Katsuobushi Pack, [For commercial use] Dried dashi Add one bag at a time and simmer for 20 minutes.
- Combine chicken clear soup, bonito stock, dried fish stock, and water.
- Pour the seasoning, flavored oil, and soup into a warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Fujieda City, Shizuoka Prefecture, has a culture of Morning ramen. The original Ramen shop was Marunaka, founded in 1919. Kiichi Oguri started out as a nighttime soba noodle stand in Yaizu, and opened a Ramen restaurant in 1935. Although it was open both during the day and at night, being located in a tea-producing region and as a market and distribution hub, many people wanted to eat something early in the morning, so morning Ramen was born. The original idea at the time was to create Ramen with a taste similar to the soba noodles familiar to Japanese people, with a refreshing flavor.
