History and origins

The tanmen at Rokyo, Ramen shop founded in 1957, is different from the typical salty tanmen topped with stir-fried vegetables. It is a unique type of Ramen called Hiratsuka Tanmen. The founder, Iwama Toshita, adapted the many dishes he saw in China during World War II that used a lot of vinegar into Ramen. After returning to Japan after the war, he tried and errored to create something using that vinegar and surplus Wheat Flour from America, and the result was Ramen known as Hiratsuka Tanmen.
Ramen soup is clear, but has the sourness of Apple Vinegar and the flavor of dashi. The noodles are kansui-free. The wakame seaweed and Onion are distinctive, and the flavor of the seaweed is smooth and refreshing, while Onion has a crisp texture. The Hiratsuka Tanmen style is to add chili oil as you eat Ramen.
