Ingredients for Kanagawa Light Ramen

・Water...10ℓ
・Whole chicken...1kg
・Chicken bones...1kg
・Pork Pork knuckle...500g
・Commercial chicken and pork white soup (CP-M6)...3kg
・ Onion...1
・ Garlic...1 stalk
・ Ginger...100g
・ Dried sardine (dried sardines)...50g
・Dried Katsuobushi flakes...25g
・ Dried bonito flakes...10g
・Dashi Kombu: Root Kombu, Rausu (Dashi konbu, Nekonbu, Rausu)...total 20g
=Completed amount…9ℓ

How to make Nakamuraya

  1. Cook the prepared chicken bones and Pork knuckle knuckles over medium heat. After skimming off the scum, add the vegetables and dashi Kombu.
  2. After 30 minutes, remove the dashi Kombu and vegetables. After 4 hours, remove the chicken bones. Cook over medium heat for 2 hours. Strain.
  3. Add Dried sardine and Katsuobushi and cook for 1 hour. Add the bonito flakes and cook for 10 minutes.
  4. Finally, add the chicken and pork white soup stock to the soup to bring out its rich flavor, then bring to a boil and it's done.

How to make it

  1. Dissolve [Commercial Use] Chicken Clear Soup and [Commercial Use] Pork Clear Soup.
  2. In 2 liters of water, [For commercial use] Add Katsuobushi pack and simmer for 20 minutes.
  3. Combine chicken clear soup, pork clear soup, bonito stock, and water.
  4. Pour the seasoning, domestic chicken oil, and soup into a warmed bowl.
  5. Add the noodles and toppings and it's done.
