This is a recipe that uses commercial Ramen soup to easily recreate the taste of Shinasobaya Ramen from Shina Sobaya Honten.

How to make Shina Sobaya Honten

  1. Add ground meat and Garlic to Chicken broth and simmer. Once the ground meat is cooked, add the sauce, Chili Pepper, and Umami seasonings.
  2. Add the chicken clear soup stock to the soup to bring out its rich flavor, then bring to a boil and the soup is ready.
  3. Add the beaten egg little by little. Pour the soup over the Ramen bowl containing the boiled noodles.

How to make it

  1. 【業務用】鶏清湯スープを溶かす。
  2. 2リットルの水に、【業務用】鰹節パックを入れて、20分煮出す。
  3. 鶏清湯スープ、鰹出汁、水を合わせる。
  4. 温めた丼に、かえしと鶏油と、スープを注ぐ。
  5. 麺とトッピングを入れたら完成。

History and origins

Founded in 1985, Shina Sobaya is Ramen shop of Sano Minoru, known as the "Ramen demon." It was a tense Ramen shop with a no-smoking policy, prohibiting everything from perfume to private conversations and cell phones. He carefully selected ingredients from all over the country, including pork, chicken, Wheat Flour, kansui (lye water), vegetables, and dried goods, and enthusiastically crafted his own Ramen, down to the smallest detail. He was one of the original master Ramen Ramen, paying particular attention to details beyond the flavor of Ramen Shoyu such as using different shapes for ramen bowls depending on whether they were served with soy sauce or salt, based on how they were enjoyed. He left behind many disciples, and his philosophy had a profound influence on those aspiring to become Ramen Ramen His disciples have 18 Ramen shops from Sapporo, Hokkaido, to Takamatsu, Kagawa Prefecture, but they are not branches or franchises; they are unique to Shina Sobaya.
