Introduction

This is an introduction to a recipe that recreates the Chinese Ramen of "Tokki," a representative ramen shop in Yokohama City, Kanagawa Prefecture (Yokohama Chinatown).
Tokki 's Chinese Ramen includes an original dish called "Tonsoku Soba," a set of Chinese noodles in a simple Shoyu sauce soup and stewed pig's feet. This is a very popular dish that allows you to enjoy the Light taste taste of Chinese noodles and the rich flavor of pig's feet.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Tokki 's Chinese Ramen.

Tokki 's materials

Ingredients for Chinese Ramen

・Water…150ml
・Chicken clear soup (tori chintan)...150ml
・Pig's feet...100g
・Other meats: 40g
= Completed amount…1 serving

How to make Tokki

  1. Tori Chintan is carefully made using Pork backbone and chicken bones.
  2. The pig's trotters are simmered in a secret sauce for two days.
  3. Finally, add the chicken clear soup stock to the soup to bring out its rich flavor, bring to a boil and it's done.

How to make it

  1. [For commercial use] Dissolve the chicken clear soup.
  2. In 2 liters of water, [For commercial use] Add one pack of Katsuobushi flakes at a time and boil for 20 minutes.
  3. Combine chicken clear soup and water.
  4. Pour the seasoning, sesame oil, and soup into a warmed bowl.
  5. Add the noodles and toppings and it's done.

History and origins

In China, it's called "Hong Sao Zu Jiao Mian," but this dish is actually called "Tonsoku Soba," a dish at Tokki. Tokki, located in Yokohama Chinatown, opened its noodle factory in 1945 and expanded into a Cantonese restaurant in 1962. "Pork Leg Noodles" has been an original ramen Ramen at Tokki since its founding. The pork leg is served on a separate plate alongside Shoyu sauce Ramen topped with Ramen. It's said the intention was to allow customers to fully enjoy the flavor of the ramen soup before eating the pork leg. The pig leg is simmered for two days, even on days off. While working at the noodle factory, owner Li developed Ramen tailored to Japanese tastes. Tokki closed in 2019 but reopened on April 21, 2022.
