How to make Ramen Jiro

  1. Cook Pork knuckle knuckles and Cabbage over medium heat for 6 hours, then add pork Pork backbone and cook for 3 hours.
  2. Add pork back fat and simmer for 1 hour.
  3. Finally, add the chicken and pork white soup stock to the soup to bring out its rich flavor, then bring to a boil and it's done.

History and origins

Founded in 1968, "Ramen Jiro" opened next to Keio University with Takumi Yamada as the general manager. In addition to the Ramen stores that have been divided into noren curtains, there are many imitation Ramen stores called "Jiro Inspire". It was originally opened under the name of "Ramen Jiro", and it is said to be a reference to the popular instant Ramen "Ramen Taro" released the previous year. When the paint shop made a mistake in the letters on the signboard when it was moved to a nearby location for construction, it was changed to "Jiro", and it has been called "Ramen Jiro" until now. Due to the large volume of the Ramen and the personality of the commander, it became a very popular store among students. In 2009, it was selected as one of the "50 Dishes to Eat in the World" by the British "Guardian".
