How to recreate "Ichiryu"
Introduction
This is an introduction to a recipe that recreates the Tokyo Ramen from Ichiryu, a ramen shop that represents Shimokitazawa, Tokyo.
Ichiryu 's Tokyo Ramen is characterized by its Shoyu-flavored soup made with pork bones and chicken bones, topped with bamboo shoots, roasted pork, and pickled ginger. The soup, which has a strong animal-based umami Umami, has a smooth texture, and Umami and richness gradually spreads, leaving a lingering taste that will have you coming back for more.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Ichiryu 's Tokyo Ramen.

・Pork Pork backbone bones...500g
・Back fat (pork back fat)...300g
・Chicken bones...1kg
・Commercial chicken and pork white soup (CP-M6)...3kg
・ Garlic...3 cloves
・ Ginger...50g
=Completed amount…10ℓ
How to make Ichiryu
- Parboil the bones (pork Pork knuckle, pork cartilage, chicken bones). Add the bones (pork Pork knuckle, pork cartilage, chicken bones) and pork back fat to the boiling water and simmer over high heat for 2 hours.
- Mash the chicken bones, add the vegetables and simmer for 1 hour.
- Continue adding water and Chicken broth as you go.
- Add the chicken and pork white soup stock to the unfinished soup to bring out the rich flavor of the stock, then bring to a boil and it's done.

How to make it
- [For commercial use] Thick pork white soup,[For commercial use] Dissolve pork clear soup.
- Combine the pork white soup, pork clear soup, and water.
- Pour the seasoning, lard, and soup into a warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Ichiryu" in Tokyo is a descendant of the famous restaurant "Chuka Soba Ichiriki" in Tsuruga City, Fukui Prefecture. It is said that he learned Ramen from his brothers at Ichi "Ryu" in Fukui, who trained at Chuka Soba Ichiriki, and opened Ramen in 1984. They are also famous for Garlic Soba, which is made by slicing raw Garlic Soba into thin strips and putting them directly into a bowl of rice.
