"Chuka Soba Takahashi" How to make Koya-Ramen

Introduction

This is an introduction to a recipe that recreates the koya-style Ramen from Chuka Soba Takahashi, a representative restaurant in Tokyo (Iidabashi Station).
The popular Koya-style Ramen at "Chuka Soba Takahashi" is Ramen with a rich, Umami soup made from slowly simmered chicken and pork, and flat Wonton. The soup is covered in fat, so you can enjoy it piping hot until the very end. The soup has the same sweet, fatty flavor as the old days, and the meaty Wonton go perfectly together, and the noodles are straight and easy to eat, making for a texture you'll want to keep eating. We also recommend adding black pepper to enhance the flavor and make the soup even more delicious.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Chuka Soba Takahashi 's koya-style Ramen.

Founded in 1991, "Chukasoba Takahashi" is a small Ramen shop that opened after the chef spent seven years training at "Shina Sobaya Koya" in Yotsuya. Despite only having eight seats, it is a popular Ramen shop that attracts as many as 200 customers a day. The ramen Tsukemen are filled to the brim with Ramen hot soup, and even when tonkotsu Ramen or rich tsukemen are popular, there has always been a constant line of customers.
