Ingredients of Tokyo Ramen

・Water...10 liters
・Chicken bones (torigara)...1kg
・Pork Pork knuckle ・・・2kg
・Momiji (chicken leg part)・・・・・1kg
・Commercial chicken white soup (CP-TBN10)...2kg
・ Dried sardine (dried sardines)・・・300g
・Dashi Kombu (kombu seaweed)...30g
・ Ginger...50g
=Completed amount...9ℓ

How to make Tenjinshita Daiki

  1. Cook water, chicken bones, pork knuckles, and Pork knuckle (chicken leg parts) over medium heat for about 4 hours, then add dried sardine Kombu, Dried sardine, and Ginger and cook over low heat for 90 minutes.
  2. Finally, add the chicken broth to the soup to bring out its rich flavor, then bring to a boil and it's done.

Founded in 1999, Tenjinshita Daiki was opened by Takekawa, who had been a Japanese cuisine craftsman for 20 years, but was captivated by Ramen. Although it is a small shop, the chef personally makes everything from Ramen noodles and soup to the evening dishes. It has been voted the best Ramen in Japan on numerous television programs and in magazines.
His solid skills, backed by his extensive culinary experience, and his constantly challenging menu and Ramen have captivated many customers.
