How to Recreate "1990-nendai no Tokyo Ramen Ramen

Introduction

Introducing a recipe that recreates Tokyo Ramen from "1990-nendai no Tokyo Ramen," a representative example of Tokyo.
"Tokyo Ramen 1990-nendai no Tokyo Ramen" is a tonkotsu ramen boom.
Nandenkanden is known as the pioneer of tonkotsu Ramen. The soup looks very rich, but it has a surprisingly Light taste when you take a sip. It is characterized by a rich, mellow, and easy-to-drink soup with a strong dashi flavor.
Another shop, "Tosakko Ramen," serves "back fat chacha" Ramen, which is finished with a generous amount of back fat. As the name suggests, the soup is covered in a thick layer of back fat, which gives the soup a mild, sweet taste and Light taste overall flavor without being greasy. Why not give this ramen, which was said to be the start of the "Kan-nana Ramen War," a try?
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Tokyo Ramen from "1990-nendai no Tokyo Ramen."
