Introduction

This is a recipe that recreates Ramen from "Shinamen Hashigo" a famous ramen shop in Ginza, Tokyo. The signature dish, "Dandanmen," is a little different from regular tantanmen, as it is finished with a fragrant sesame sauce that gives it a refined spiciness and a rich, flavorful soup with a hint of dashi.
The soup is of course spicy, but the taste is Light taste and it is served with thin, straight noodles.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Shinamen Hashigo.

How to make Shinamen Hashigo

  1. Boil the chicken bones and Pork backbone in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
  2. Place the bled chicken bones and Pork backbone in a pot and simmer over low heat for 4 hours.
  3. By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.

History and origins

Dandan noodles by "Shinamen Hashigo" opened in Ginza, Tokyo in 1964, creating a scene for dandan noodles in Tokyo. Dandan noodles are generally called "tantanmen," but this restaurant calls them "dandanmen." The main store is called "Hashigo," which is said to be the name of the founder. It is a Ramen shop with a long history, and has become a famous restaurant with multiple locations in Tokyo.
Tantanmen that you can't find anywhere else! The deliciously spicy soup is addictive, and the soup is simply delicious! It's no wonder that this "Dandanmen" has been loved by fans for so many years.
