"Minmin Ramen" - How to make Hachioji Ramen
Introduction
This is an introduction to a recipe that recreates Hachioji Ramen from Minmin Ramen, a ramen shop that represents Hachioji City, Tokyo.
Minmin Ramen 's Hachioji Ramen is a Shoyu soup with a secret sauce made with pork bones and Aromatic Vegetables, giving it an exquisite richness. The soup is covered with lard, which is apparently a secret recipe of homemade lard.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Minmin Ramen 's Hachioji Ramen.
"Minmin Ramen" How to make Hachioji Ramen
soup ingredients
- Water…10ℓ
- Chicken bones...2kg
- Pork bones...500g
- [Commercial Use] Chicken Clear Soup (CP-TC4)... 2kg
- 鯖節…200g
- 1 long green onion
- 生姜…50g
- Garlic...1 clove
- Pork for char siu...appropriate amount
How to make soup
- Boil chicken bones and pork bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the drained blood chicken bones and pork bones in a pot and simmer over low heat for 2 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.

- [Commercial use] Chicken clear soup (CP-TC4)... 50cc
- [Commercial use] Chicken and pork mix soup (CP-M6)... 50cc
- [Commercial use] Mackerel broth pack...200cc
- [Commercial use] Genuine lard...15cc
- [Commercial use] Grilled Dried sardine in oil...5cc
- [Commercial use] KOI Shoyu...30cc
- [For commercial use] Hachioji noodles②...1 ball
- [Commercial use] Pork belly chashu (with grill)... appropriate amount
- [For commercial use] Nori cut into 6 pieces...appropriate amount
- Chopped Onion...appropriate amount
How to make it
- Dissolve [Commercial Use] Chicken Clear Broth Soup (CP-TC4) and [Commercial Use] Chicken and Pork Mix Soup (CP-M6).
- In 2 liters of water, [For commercial use] Add one packet of mackerel stock and simmer for 20 minutes.
- Combine chicken clear soup, chicken and pork mix soup, and mackerel stock.
- Pour KOI Shoyu, grilled Dried sardine oil, and soup into a warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Hachioji Ramen is said to have originated at Hatsufuji, founded in 1962. Ramen three main features are chopped Onion, a Shoyu based sauce, and Abura-shi covering the surface. The chopped Onion that are synonymous with Hachioji Ramen date back to the time when the quality of green onions was poor during the summer, and an attempt was made to use Onion as a substitute. The idea eventually gained popularity and became established as an actual Ramen flavor. There's also another origin story: Apparently, a ramen maker came across Ramen with chopped Onion while traveling in Hokkaido, and decided to imitate them. However, Onion were quite spicy, so to alleviate this, they floated a lot of Abura-shi on top, reducing Onion 's spiciness and bringing out its sweetness.
My favorite ramen, Minmin Ramen, which is a representative example of Hachioji Ramen and was founded in 1982, uses chopped Onion in two different sizes, subtly creating a fun texture.
