How to make "Inoue" Tokyo Ramen

Inoue 's Materials

・Water...10 liters
・Chicken bones...1kg
・Pork knuckles・・・1kg
[Commercial Use] Chicken Clear Soup (CP-TC4)...3kg
・Dashi Kombu...20g
・ Garlic...2 cloves

Inoue 's recipe

  1. Boil chicken bones and pork knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.

History and origins

Founded in 1966, Inoue is a very popular restaurant in Tsukiji Market. There are always people slurping Ramen not only at the counter but also at the standing tables on the street. On New Year's Eve, as many as 1,600 people ate Ramen there. At busy times, they would make 12 servings Ramen at once.
The staff member puts the sauce, spring onions, and Umami seasoning into the bowl, then quickly adds the soup and noodles. At the same time, the staff member beside him adds the roast pork and bamboo shoots, completing the dish. It was a truly impressive sight.
The ramen shop had been Ramen for many people involved with the market, but it closed down after a fire in August 2017, one year before Tsukiji Market was to move to Toyosu.
