Introduction
This is a recipe that recreates the tanmen from Aji Aji no Juban that is representative of Higashi-Nakano, Tokyo.
Aji no Juban 's tanmen is made with a clear, mild-tasting soup stock topped with plenty of vegetables, and is served with thick noodles. How to make Aji no Juban
- To make the soup, grill the vegetables and then simmer all the ingredients over medium heat for an hour.
- Once the broth comes out, it will become the base of the flavor. [For commercial use] Add the frozen chicken and pork white soup (CP-M6) and dissolve over low heat.
- Garlic the tanmen vegetables, lightly fry the sesame oil, garlic, and pork, then add the vegetables in that order. Then add the soup from step 2.

Aji no Juban is a Ramen shop that was founded in 1956. The name "Aji no Juban" comes from the fact that the founder was from Azabu Juban.
