・豚ゲンコツ・・・1kg
・鶏ガラ・・・300g
・【業務用】豚清湯スープ(CP-BC6)・・・1kg
・煮干・・・50g
・生姜・・・100g
・ラード・・・ 適量
Yokaro
- 沸騰したお湯に、鶏ガラ、豚ゲンコツを血抜きのために2-3分茹で上げ、すぐに取り出し流水で洗い流す。
- 脱血された鶏ガラ、豚ゲンコツを寸胴に入れて弱火で2時間炊き上げる。

- 煮干し、生姜、ラードを入れ、弱火で4〜5時間炊き上げる。

History and origins
Founded in 1926, Kumagai "Yokaro" was originally opened as "Western Cuisine Yokaro".
Around the time of the 1936 Berlin Olympics, the town was in a state of turmoil, and Chinese soba began to be sold as a taste that was favored by the public.
In 1997, it was selected as the Saitama Ramen Grand PrixKumagaya's soul food (Ramen).
