The distinctive feature of Chintatsu Soba is that the soup is a Light taste, clear broth made from pork knuckles and dried Dried sardine, combined with a Shoyu sauce sauce made from the dipping sauce for the pork slices, and topped with a Chintatsu Soba amount of green onions and pork.

Ingredients for Chintatsu Soba

【ベーススープ(完成量9ℓ)】

・Water...10 liters
・Pork knuckles...2kg
・Chicken bones...2kg
[Commercial Use] Pork Clear Soup (CP_BC6)...4kg
・ Katsuobushi...1kg
・Dashi Kombu ・・・100g
・ Dried shiitake ・・・10g

How to make Chintatsu Soba

  1. Boil chicken bones and pork knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
  2. Place the bled chicken bones and pork knuckles into a pot and simmer over low heat for 2 hours.

  1. Dissolve the [Commercial Use] Chicken Clear Soup and [Commercial Use] Pork Clear Soup.
  2. Add one packet of [Commercial Use] Bonito Stock to 2 liters of water and boil for 20 minutes.
  3. Combine pork clear soup, chicken clear soup and bonito stock soup.
  4. Add green onions to sesame oil and simmer for 20 minutes to make green onion flavored oil.
  5. Pour the soup, mixed with the seasoning and flavored oil, into a warmed bowl.
  6. Add the noodles and toppings and it's done.

History and origins

Founded in 1953, Chintatsu Soba is the only original Ramen in Chichibu City, Saitama Prefecture. The ingredients are simply seasoned with sesame oil and Shoyu sauce, but this combination is unique.
The ingredients, soup, sauce, and noodles are all mixed together in one pot, creating a unique stew-like Ramen. The onions used are local Fukaya onions, but the variety changes depending on the season.
