This is a recipe that uses commercial Ramen soup to easily recreate the taste of Zenya's salt Ramen.
How to make Zenya salt Ramen
Zenya's ingredients
【soup】
・Water...10 liters
・ Sake ・・・ 1 liter
・Pork knuckles...2kg
・Chicken bones: 500g
・Whole chicken・・・1
・ [Commercial Use] Pork Clear Soup (CP-BC6) …4kg
・ Onion ・・1
・Carrot...1 piece
・Long onion・・・1 stalk
・ Ginger: 100g
・ Garlic...2 cloves
・ Cabbage ・・・30g
・ Black Pepper...10 grains
[Dashi (broth)]
・Water...2ℓ
・ Sake...500ml
・Dashi Kombu...25g
How to make Zenya
- Boil chicken bones and pork knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the bled chicken bones and pork knuckles into a pot and simmer over low heat for 2 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.

How to make it
- Dissolve the [Commercial Use] Chicken Clear Soup and [Commercial Use] Pork Clear Soup.
- Add Onion, Cabbage, Ginger, and Carrot to water and simmer for 30 minutes to make vegetable stock.
- Combine pork clear soup, chicken clear soup and vegetable stock.
- Pour the soup mixed with the seasoning into the warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
In 1999, Ramen loving owner Itakura-san opened Ramen shop "Zenya" after appearing on television. Ramen soup is clear, but more golden than transparent. The noodles are also golden in color. This is truly golden shio Ramen, and is often called the best shio Ramen in Saitama Prefecture. It is not too salty, but has a mellow yet firm saltiness, making it a flavorful Ramen. The flavor created by the owner, a former national civil servant, is so profound that it cannot be judged from the characteristics of Ramen recipe or its appearance.
