This recipe uses a commercial Ramen broth to easily reproduce the taste of the kinpira Ramen from "Gotochi Mian" (local rice noodles).
How to make Kinpira Ramen
Ingredients for Kinpira Ramen

・ [Commercial Use] Chicken Clear Soup (CP-TC4)... 150ml
[Kinpira]
・Burdock (shredded)・・・50g
・Carrots (thinly sliced)・・・50g
・ Shoyu...10ml
・ Sugar: 5g
・Mirin...5g
・ Sake...5g
・Sesame oil...5g
・White sesame seeds...10g
How to make Kinpira Ramen
- To make Kinpira, first fry the carrots and burdock root in sesame oil over medium heat. Add the seasonings and fry until the liquid has evaporated.
Add white sesame seeds and it's done. The key is to fry it softly to reduce the difference in texture with the noodles and to improve the texture. - Add the seasoning, chicken clear soup, and noodles to a bowl, then top with toppings and you're done.
