How to make Nirasaki Ramen at Midoriya Shokudo
Introduction
Here is a recipe that reproduces Nirasaki Ramen of "Midoriya Shokudo", which represents the city of Nirasaki (Nirasaki City) in Yamanashi Prefecture.
Nirasaki Ramen of "Midoriya Shokudo" is a dark-colored soup that is very easy to drink without feeling too much salt, and you can taste a slight sweetness in the broth Umami. The broth from the chashu pork is mixed with the soup to further Umami enhance the taste, and it is no wonder that this Ramen is so popular that you will want to eat it over and over again.

How to make Midoriya Shokudo
- Boil chicken bones and pork bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Put the drained chicken bones and pork bones into a pot and simmer over low heat for 4 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.

How to make it
- Dissolve the [Commercial Use] Chicken Clear Soup and [Commercial Use] Pork Clear Soup.
- Combine the pork clear soup, chicken clear soup, and water.
- Pour the soup mixed with the seasoning into the warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Ramen has a Umami flavor with a pork bone clear soup stock, a thick Shoyu sauce sauce derived from the roast pork sauce, and umami seasonings. The three great Ramen restaurants in Nirasaki are Midoriya Shokudo, Alps Shokudo, and Nakayoshi Shokudo (now closed).
It is said that the founder of Midoriya Shokudo learned this flavor when he visited Manchuria and returned, so it is believed to have been founded in the 1940s or 1950s.
Although this is an area that doesn't have much of an image of Ramen, Ramen has been around for a long time and is often on the menu at popular restaurants.
Many Ramen restaurants offer stewed chicken offal or horse offal.
