Introduction
This is a recipe that recreates Shoyu Ramen from Sankakuya, a representative restaurant in Fuefuki City, Yamanashi Prefecture.
Sankakuya 's Shoyu Shoyu Ramen a very simple taste. Ramen has a strong Shoyu flavor but a Light taste taste that gives Ramen a nostalgic feel.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Sankakuya 's Shoyu Ramen.
How to make "Sankakuya "Shoyu Ramen
Sankakuya ingredients
・水・・・10ℓ
・鶏ガラ・・・1kg
・豚背ガラ・・・1kg
・【業務用】鶏清湯スープ(CP-TC4)・・・4kg
・鰹節・・・100g
・出汁昆布・・・ 10g
How to make Sankakuya
- 沸騰したお湯に、鶏ガラ、豚背ガラを血抜きのために2-3分茹で上げ、すぐに取り出し流水で洗い流す。
- 脱血された鶏ガラ、豚背ガラを寸胴に入れて弱火で2時間炊き上げる。
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
- 鰹節、出汁昆布を入れ、弱火で4〜5時間炊き上げる。
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
- 骨も十分に崩れたら、味のベースとなる【業務用】鶏清湯スープ(CP-TC4)を冷凍のまま入れ弱火で溶かす。

How to make it
- 【業務用】鶏清湯スープと、【業務用】豚清湯スープを溶かす。
- 2リットルの水に、【業務用】鰹出汁パックを1袋入れて、20分煮出す。
- 豚清湯スープ、鶏清湯スープと鰹出汁スープを合わせる。
- 温めた丼に、かえしと合わせたスープを注ぐ。
- 麺とトッピングを入れたら完成。

History and origins
Sankakuya, which was founded in 1909 and is located near Isawa Onsen, is a long-established Ramen shop with over 100 years of history. It is unusual in that it is free of oil and green onions, and has Ramen traditional flavor.
The menu consists of only Chinese noodles and meat rice, the latter made with horse meat.
