How to make Arirang Ramen at "Hachihira no Shokudo"
Introduction
This is a recipe that recreates the Arirang Ramen from Hachihira no Shokudo that represents Chosei District, Chiba Prefecture.
Ramen is characterized by its Shoyu sauce-based soup, the savory flavor of Garlic, and the sweetness of plenty of Onion, making it "a bowl you can only taste here." You can really taste the sweetness of the pork, and the mellow spiciness of the homemade chili oil and the grated Garlic are an exquisite match, with its rich, delicious spiciness captivating fans all over the country.
This is a recipe that uses commercial Ramen soup so that you can easily recreate the taste of Hachihira no Shokudo.
How to make Arirang Ramen at Hachihira no Shokudo
soup ingredients
- Water…10ℓ
- Pork bone…3kg
- [Commercial Use] Rich Pork White Soup (CP-B10)... 2kg
- 煮干し…200g
- Onion...1
- 生姜…30g
- 2 green onion heads
How to make soup
- Boil the pork bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the drained pork bones in a pot and simmer over high heat for two hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.

Ingredients (for 1 cup)
- [Commercial Use] Rich Pork White Soup (CP-B10)... 200cc
- [Commercial Use] Dried Dashi Stock Pack...100cc
- [For commercial use] "Hachihira no Shokudo...35g
- Medium-thick noodles...1 ball
- 200g minced pork
- Garlic (sliced)...5 cloves
- Onion (coarsely chopped)...200g
- 200g Chinese chives (3cm)
- 5 cloves Garlic (grated)
How to make it
- [For commercial use] Dissolve the thick pork white soup (CP-B10).
- In 2 liters of water, [For commercial use] Add one packet of dried dashi stock and simmer for 20 minutes.
- Combine pork broth soup with dried stock.
- Fry Garlic, Onion and minced meat in salad oil, then add chives at the end.
- Add Garlic garlic and seasoning to the soup made in step 3.
- Pour the soup from step 2 over the boiled noodles.

History and origins
Arirang Ramen is the name of Ramen served at Hachihira no Shokudo, which was founded in 1972. It's one of Chiba's top three Ramen, and is said to have been created after more than five years of trial and error by owner Furuichi, who was asked by a regular customer to create Ramen more unique Ramen. None of Ramen toppings are prepared in advance; instead, the vegetables are cut and fried for each order. The chewy, crunchy noodles and the stamina-boosting toppings are undeniably delicious. The soft, mushy Onion and chives, along with the sweet and tender pork, are topped with a punchy Garlic, making for a satisfying bowl of ramen.
Ramen shop is located on a mountain pass, and as the name suggests, it is located in a remote area deep in the mountains. The name comes from the fact that the Ramen gives you the stamina to cross Arirang Pass, a legendary pass on the Korean Peninsula.
