How to make soup

  1. Boil the chicken bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.

History and origins

Katsuura Tantanmen, as its name suggests, is Regional ramen from Katsuura City, Chiba Prefecture. It is said that the origins of Katsuura Tantanmen date back to 1954, when the head chef of Ezawa a restaurant founded in the city, wanted to make Sesame Paste noodles, but was unable to obtain sesame paste*, so he created his own version of the dish.
Therefore, it does not have the typical sesame flavor, and is characterized by its Shoyu base topped with chili oil, spicy minced meat, and Onion, and the bright red surface of the bowl.It became established as Ramen to warm the cold bodies of fishermen after working in the cold sea.

* Sesame Paste: Made by carefully roasting white sesame seeds to release their aroma and then spreading them into a paste with oils such as grapeseed oil or extra virgin olive oil. It is a typical condiment used in a variety of Chinese dishes, and is often used in dishes such as tantanmen noodles, bang bang chicken, sesame sauce for chilled Chinese noodles, sesame-flavored salads, and as a dipping sauce for shabu-shabu.

Ezawa 's Five Commandments
