This is an introduction to a recipe that recreates the stamina chilled dish of "Kyodo no Tora," a representative dish from Mito City, Ibaraki Prefecture.
Kyodo no Tora 's stamina chilled ramen is Regional ramen made with thick, chilled noodles and plenty of Cabbage, liver, pumpkin and carrots in a sweet sauce. The balance of sweetness and spiciness of the sauce is exquisite, and you'll be hooked after just one bite.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Kyodo Kyodo no Tora 's stamina chilled ramen.
How to make "Kyodo no Tora" chilled stamina soup

- Usukuchi Soy Sauce...200ml
- 上白糖…150g
- Pork liver...200g
- Sake …100ml
- 生姜…5g
- Pumpkin...20g
- にんじん…20g
- キャベツ…30g
Water-soluble potato starch
- 水…15g
- Potato starch...15g
- Chili Pepper...1g
How to make Kyodo no Tora
- Mix water, [Commercial Use] Chicken and Pork White Soup (CP-M6), Shoyu, and Sugar.
- Pork liver marinated in Sake and Ginger and vegetables are deep-fried in oil.
- Combine 1 and 2 and heat. Once boiling, thicken with water-dissolved potato starch.

History and origins
Stamina chilled noodles is a local noodle dish from Mito that consists of thickened, hot pork liver and vegetables placed on chilled noodles.
It is said that this dish was originally created in a restaurant called "Daishin" around 1970. At the time, liver was a cheap ingredient that was often thrown away, and Ibaraki Prefecture was also cheap, so the restaurant wanted to serve students something cheap and energizing.
It was conceived with this idea in mind.
The creator, Nagai-san, who was the manager of "Daishin" and is said to have been the creator, moved to Mito and founded "Matsugoro" in 1987, and many of his disciples have spread the "Stamina Hiyashi". The above recipe was created by Nishio Ryoichi as an homage to "Kyodo no Tora" which was located in Kyodo, Tokyo.
