Koran 's King of Chinese Noodles is based on a typical Chinese noodle dish made with chicken and seafood soup stock and Shoyu sauce, and is topped with a generous amount of thinly sliced green onions and Black Pepper.
The traditional ramen noodles are made with a delicious chicken and seafood soup stock, seasoned with Shoyu sauce, and seasoned with the tangy Black Pepper and sweet green onions, creating a perfect match.

How to make "Koran" King's Chinese Noodles

Koran ingredients

[Base soup]

・Water...10 liters
・Chicken bones...4kg
[Commercial Use] Chicken Clear Soup (CP-TC4)...2kg
・ Katsuobushi...1kg
・Dashi Kombu ・・・100g
・ Dried shiitake ・・・10g

How to make Koran

  1. Boil the chicken bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
  2. Place the drained chicken bones in a pot and simmer over low heat for 3 hours.
  3. By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
  4. Add Katsuobushi, dashi Kombu, and Dried shiitake and simmer over low heat for 2 hours.

History and origins

The "Negi Kosho Ramen" of Koran, which was founded in 1968, has come to be known as "Osama Chuka Soba." Koran sadly closed in 2010, but many Ramen shops in Nagano Prefecture have added "Osama Chuka Soba" to their menus, a dish that was named after the desire to create Ramen that would represent the deliciousness of Nagano. In particular, Tsukada, the owner of Kimuzukashiya, Ramen shop that represents Nagano Prefecture, has widely recommended this ramen both within and outside the prefecture. This ramen features a Light taste chicken bone Ramen soup topped with a generous amount of Black Pepper and plenty of roughly sliced diagonally green Ramen.
