How to make Gunma Ramen at "Seikaken"
Introduction
This is a recipe for Seikaken (seikaken) representing Takasaki City, Gunma Prefecture, Japan, reproduced from Gunma Ramen.
Gunma Ramen of "Seikaken" has a simple but never boring soup that goes very well with its signature flat, medium-thick noodles that are worth slurping. The clear soup is so tasty that you can drink it down without feeling it is too salty or Light taste rich. It has a slight Shoyu flavor and is not too oily, so it is not cloying, and you can feel a lot of Umami soup stock.
This recipe uses Ramen soup for commercial use to easily reproduce the taste of Seikaken 's Gunma Ramen.
How to make Gunma Ramen at Seikaken
Seikaken ingredients
・Hot water: 10 liters
・Pork knuckles...3kg
・ Chicken skin...1kg
・ [Commercial Use] Pork Clear Soup (CP-BC6)... 3kg
How to make Seikaken
- Boil the pork knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the drained pork knuckles in a pot and simmer over low heat for 1 hour.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
- Add Chicken skin and simmer over low heat for 2 hours.
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
- Once the bones have been broken down, they will form the base of the flavor. [For commercial use] Add frozen pork clear soup (CP-BC6) and dissolve over low heat.
- Once the frozen soup has thawed and the flavors have blended well, it is ready.

Ingredients (for 1 cup)
- [Commercial Use] Pork Clear Soup (CP-BC6)... 100cc
- [For commercial use] "Seikaken)...43g
- Chicken skin …20g
- Handmade flat noodles...1 ball
- [For commercial use] Sukoburu Menma...appropriate amount
- [For commercial use] Pork belly chashu...appropriate amount
- Green onion...appropriate amount
- Naruto...appropriate amount
How to make it
- [For commercial use] Dissolve the pork clear soup.
- Add one packet of [Commercial Use] Bonito Stock to 2 liters of water and boil for 20 minutes.
- Combine pork clear soup, chicken clear soup and bonito stock soup.
- Pour the soup mixed with the seasoning into the warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
The restaurant that inspired the movie "Ramen Kuitei" is Seikaken. Seikaken, a long-established restaurant that was in business from 1956 to 2016, offered two types of noodles: machine-made and hand-made. It was a refreshing Ramen that used pork bones and Chicken skin as the broth, but did not use lard. Currently, Seijinken, which was trained at this restaurant, is located in the city of Takasaki.
