Nagaoka Ginger Shoyu Ramen, counted as one of the "Five Great Ramen of Niigata," is characterized by its pork bone-based soup stock, which is cooked with seafood and vegetables, and a strong Shoyu sauce. In particular, because Ginger is cooked into the Pork bone broth stock, Ginger accents the strong Shoyu, resulting in a refreshing taste that belies its appearance.
This is a recipe that uses commercial Ramen soup so that you can easily recreate the taste of Aoshima Shokudo.

How to make "Aoshima Shokudo "Ginger Shoyu Ramen
Soup ingredients
- Water…10ℓ
- Chicken bones...3kg
- Pork knuckles...1kg
- [Commercial Use] Pork Clear Soup (CP-BC6)... 3kg
- Spine...500g
- Garlic...1 clove
- 生姜…500g
- 煮干し…30g
- Onion...1
- 1 apple
- 1 green onion
How to make soup
- Boil chicken bones, pork knuckles, and spine in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the bled chicken bones, pork knuckles, and spine in a pot and simmer over low heat for 2 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.

- Vegetable stock (water can also be used)... 150cc

How to make it
- Dissolve the [Commercial Use] Chicken Clear Soup and [Commercial Use] Pork Clear Soup.
- Add one packet of [Commercial Use] Bonito Stock to 2 liters of water and boil for 20 minutes.
- Combine pork clear soup, chicken clear soup and bonito stock soup.
- Pour the soup mixed with the seasoning into the warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Nagaoka Ginger Shoyu Ramen, one of Niigata's top five Ramen, has its roots in Aoshima Shokudo, which was founded in 1963. Aoshima Shokudo is a hugely popular Ramen restaurant with its main store in Miyauchi, Nagaoka City, Niigata Prefecture, and also has a branch in Akihabara, Tokyo. While Ginger was first added to Ramen soup to eliminate the odor, it has become a staple in the cold climate of Niigata, where it is said to "warm the body." Ginger adds an accent to the carefully simmered broth, and the rich soup has a refreshing aftertaste, making it extremely easy to drink.
The soup, noodles, and pork slices are all delivered directly from the main store in Nagaoka city every morning. It's no surprise that it's delicious! This is the original Nagaoka Ginger Shoyu Ramen, where you can enjoy Ginger flavor with every bite.
