Daikokutei 's Sanjo Curry Ramen is a soup-type curry Ramen that combines the flavor of curry with the flavor of Japanese dashi, and is made by extracting dashi from Dried sardine and Kombu. The soup has a nostalgic, comforting, and gentle taste that goes perfectly with the toppings of pork and Onion. It is truly a taste that can only be found here.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Daikokutei 's Sanjo curry Ramen.
How to make Daikokutei Sanjo Curry Ramen
Daikokutei ingredients
・Water...5 liters
・Pork knuckles...1kg
・Chicken bones...1kg
・ [Commercial Use] Chicken and Pork White Soup (CP-M6)...3kg
・ Katsuobushi...50g
・ Dried sardine...25g
・Dashi Kombu... 10g
・ Garlic...1 piece
・ Onion...1
・Carrot...1 piece
・Curry powder...10g
How to make Daikokutei
- Boil chicken bones and pork bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the drained chicken bones in a pot and simmer over low heat for 2 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
- Add pork bones, Dried sardine, Onion, and Ginger and simmer over low heat for 4 to 5 hours.

How to make it
- [For commercial use] Dissolve the chicken and pork white soup (CP-M6).
- Add one packet of [Commercial Use] dried stock to 2 liters of water and boil for 20 minutes.
- Combine chicken and pork broth soup with dried stock soup.
- Pour the soup mixed with the seasoning into the warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Sanjo City has many restaurants that serve curry Ramen, and there are two types: the "curry soup type," in which curry and soup are combined, and the "curry topping type," in which curry is poured over Ramen.
The recipe here is for a curry soup type. The oldest curry Ramen shop of this type is said to be "Daikokutei," which was founded around 1950. This area was full of factories and people were busy, with no time to eat, so curry Ramen, which doesn't get cold easily, was perfect for delivery. It was spicy and gave stamina, and gradually more and more shops started offering curry Ramen.
