How to make Ryutei chilled Chinese noodles
Ingredients for Ryutei
・Water…5ℓ
・Chicken bones...1kg
・ [Commercial Use] Chicken Clear Soup (CP-TC4) …2kg
・ Onion...50g
・ Garlic...3 cloves
・ Ginger …40g
・Green onion...1
・ Katsuobushi...30g
How to make Ryutei
- Boil the chicken bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the drained chicken bones in a pot and simmer over low heat for 3 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.

How to make it
- [For commercial use] Dissolve the chicken clear soup (CP-TC4).

History and origins
One of the original chilled Ramen in Japan is said to have been created around 1937 by Ryutei, a restaurant in Sendai, Miyagi Prefecture, founded in 1931. It is said to have been a unique improvement on the Chinese "liangbanmen" (cooled noodles) and sold as "hiyashi Ramen." Chilled Ramen was created as a dish that could be enjoyed even in the hot summers in an era without air conditioning. Unlike today, there were no air conditioners at the time, and the drop in customer numbers during the summer due to the oily, hot Ramen was apparently severe. It is also said that in 1933, Yoshiko Saikan in Jimbocho, Tokyo, created Goshokuryanbanmen (said to be the origin of chilled Chinese noodles).
It is said that the idea for this dish came from the ryobanmen noodles that the second-generation owner ate in Shanghai. Furthermore, Sakai Chinese Restaurant in Kyoto, which was founded in 1939, has been making sesame-flavored cold noodles since its inception. It seems that Ramen restaurants in every region have been coming up with Ramen menus suitable for summer.
