Introduction

This is an introduction to a recipe that recreates Miso Ramen from Ramen Ajiyoshi, a representative restaurant in Sendai, Miyagi Prefecture.
The Miso Ramen at Ramen Ajiyoshi has a surprisingly mellow soup and is made by simmering pork bones, chicken bones, Katsuobushi, and vegetables Ramen resulting in a very refined Miso.
This ramen is made with a Miso base and Garlic, and the noodles are well-seasoned, making it a very delicious bowl of ramen. The bamboo shoots, which are seasoned from scratch, are also popular.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Ramen Ajiyoshi.

How to make Ramen Ajiyoshi

  1. Boil chicken bones and pork knuckles in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
  2. Place the bled chicken bones and pork knuckles into a pot and simmer over low heat for 2 hours.

  5. Add Dried sardine and simmer over low heat for 1 hour.

  7. Once the bones have been broken down, they will form the base of the flavor. [For commercial use] Add frozen chicken and pork white soup (CP-M6) and dissolve over low heat.
  8. Once the frozen soup has thawed and the flavors have blended well, it is ready.

History and origins

Ramen Ajiyoshi has long been famous in Sendai, and is known for its Miso Ramen. Ramen Ajiyoshi was founded around 1966. The founder, Mr. Ujiie, opened a Ramen shop near Sendai, and about 10 years later moved Ramen to the center of the city.
This Ramen shop is open late into the night and has been frequented by many celebrities. Miso in the popular "Miso Ramen" contains a lot of Chili Pepper, and is sometimes said to be spicier than regular Miso Ramen. Rather than dissolving Miso in Ramen soup, Miso is placed on a spoon and then gradually dissolved in Ramen soup as it is eaten.
This Ramen restaurant has long been loved by fans not only from the local area but all over the country as a place to finish off a night of drinking.
