Introduction
This is an introduction to a recipe that recreates the Miyagi Chicken Ramen from Iroha Shokudo that represents Osaki City (formerly Furukawa City) in Miyagi Prefecture.
Iroha Shokudo 's Miyagi Chicken Ramen features a nostalgic soup made with chicken stock and thick, meaty chicken thigh char siu. Oil floats on the surface of the soup, giving it a light Shoyu color that's sure to whet your appetite. With just one bite, you can taste the slightly sweet, rich flavor of the Tohoku-style soup, and Umami of the chicken, making for a very satisfying flavor.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Iroha Shokudo 's Miyagi Chicken Ramen.
How to make Miyagi Chicken Ramen at "Iroha Shokudo"
Ingredients for Iroha Shokudo
・Water...10 liters
・Chicken bones... 2kg
・ Pork backbone ・・・2kg
・ [Commercial Use] Pork Clear Soup (CP-BC6)...5kg
・ Katsuobushi (katsuobushi)... 500g
・ Dried sardine...200g
How to make Iroha Shokudo
- Boil chicken bones and pork bones in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Put the bled chicken bones, pork bones, Katsuobushi, and Dried sardine into a pot and simmer over low heat for 4 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.

- [Commercial use] Bonito dashi pack...100cc

- [For commercial use] Straight thin Tsukemen...1 bowl
- [For commercial use] Pork shoulder loin...appropriate amount

- Green onion...appropriate amount
- [For commercial use] 8-cut nori seaweed...1 sheet
How to make it
- Dissolve [Commercial Use] Pork Clear Soup and [Commercial Use] Chicken Clear Soup.
- Add one packet of [Commercial Use] Bonito Stock to 2 liters of water and boil for 20 minutes.
- Combine pork clear soup, chicken clear soup, and bonito stock.
- Pour the seasoning, chicken oil, and soup into a warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Founded in 1966 in Furukawa City, Miyagi Prefecture, Iroha Shokudo is a famous Ramen restaurant that has long queues. It is open for two hours in the afternoon. Unlike other Ramen restaurants, there are no signs or noren curtains, and customers must follow the instructions of the restaurant. Pickles are served before Ramen is served. If you order the special Ramen, it comes with pork loin tonkatsu on top.
