How to make "Ramen no Chigusa" Kuji Ramen

Introduction

This is an introduction to a recipe that recreates Kuji Ramen from Ramen no Chigusa, a representative ramen shop in Kuji City, Iwate Prefecture.
The Kuji Ramen from "Ramen no Chigusa" is characterized by its highly pure chicken broth soup made from 100% whole chicken. Contrary to the image of a Light taste soup from the appearance, the rich aroma of chicken broth fills the air with a strong Umami flavor as soon as you take a bite.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Kuji Ramen from "Ramen no Chigusa."

How to make Chigusa

  1. Place the parent chicken in a pot and cook over low heat for 2 hours.
  2. By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
  3. Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
  4. Once the bones have been broken down sufficiently, reduce the heat to low and add the frozen commercial chicken clear soup stock, which forms the base of the flavor, and dissolve over low heat.
  5. Once the frozen soup has thawed and the flavors have blended well, soup ① is ready.
  6. For soup ②, add chicken breast and thigh meat for the char siu when it is boiling and simmer for 20 to 30 minutes.
  7. Once the chicken is cooked through, add the frozen commercial chicken clear soup to enhance the flavor and dissolve over low heat.
  8. Finally, combine soups ① and ② to complete the dish.

  2. Add water to the chicken soup to dilute it.
  3. Pour the soup, which has been mixed with the seasoning and chicken oil, into a warmed bowl.

History and origins

Founded in 1948, Ramen no Chigusa is a famous Ramen restaurant that is only open for three and a half hours in the afternoon, but even in that short time, there are always long queues. Since its founding, the restaurant has been solely focused on chicken, and Ramen soup and char siu are made exclusively from chicken. It is said that they went round chicken farms every morning to get their supplies. The Ramen noodles are homemade and are about 60cm long. It is said that the best part of Kuji Ramen is the way you can pick them up with chopsticks. Katsu Ramen, topped with freshly fried pork cutlet, is also popular.
