How to make soup

History and origins

Founded in 1975, Yanagiya was opened as a hand-made soba noodle shop on the third floor of a bookstore by owner Oshinada, who believed that "a bowl of noodles made with love will surely resonate with customers' hearts." Originally, Oshinada ran a hand-made soba noodle shop in Osako Town, Iwate Prefecture (now Hanamaki City), but due to depopulation, he moved to Morioka and began making Ramen. The portions are generous, and the name "Original Kimchi Natto" became popular, making Yanagiya one of Iwate's leading Ramen shops. This is the birthplace of Natto kimchi Ramen.
Natto Ramen was originally created after the proprietress remembered the amazingly delicious Natto soup her husband used to serve her when she was an apprentice. One day, while eating Natto Ramen for the staff meal, she saw some kimchi nearby and had an idea: "Maybe the spiciness and sourness of kimchi would go well with Natto." This is how the ramen was born. Now, they grow their own wheat and even make their own noodles.
The kimchi has a mildly spicy taste, making it easy to eat even for those who don't like spicy food.
