History and origins

Jajamen is a mixed noodle dish created by Hakuryu, inspired by the "Zhajiangmian" of northeastern China.
Hakuryu 's founder, Takashina Kankatsu, began running a food stall around 1945 after returning from Manchuria at the end of the war, and the flavor was developed through continuous improvements based on customer feedback. The restaurant opened in 1953. The noodles are not Chinese noodles like regular Ramen, but flat noodles similar to udon. Customers can add chili oil, vinegar, or Garlic to their liking. After eating, they add a raw egg, the hot noodle broth, meat Miso, salt, pepper, and chili oil to make a chicken egg soup.
