How to make Jumonji Ramen from "Marutama Shokudo"

Introduction

This is a recipe that recreates the Jumonji Ramen from Marutama Shokudo that represents Yokote City, Akita Prefecture.
Marutama Shokudo 's Jumonji Ramen is characterized by its clear soup with an appetizing aroma of Dried sardine. The soup is oil-free and extremely clear, and with just one bite you can feel the strong aroma of Dried sardine, but it's not at all heavy. Dried sardine sardines, seafood, and Light taste Shoyu are a perfect match, and the umami Umami slowly spreads throughout the dish.
Another feature of this restaurant is that it tops the noodles with gluten. One of the pleasures is eating gluten that has absorbed plenty of Japanese-style Shoyu sauce soup.
This is a recipe that uses commercial Ramen soup to recreate the taste of Marutama Shokudo 's Jumonji Ramen.
