History and origins

Chicken offal Ramen, a local specialty of Shinjo City, Yamagata Prefecture, is known Ramen Ramen Because poultry farming was popular there, it was customary to slaughter an entire chicken to entertain guests on special occasions or when visiting. The chicken innards, not just the meat, were simmered as a dish, and this eventually spread to restaurants.
Furthermore, it is said that around 1970, a customer added chicken offal Ramen, which was available as Side dishes at Issaan Branch, which was founded in 1950, and that is how chicken offal Ramen began. Chicken offal can be found in a variety of forms, including heart, liver, stomach, and kumquat (the yolk before the egg becomes brown). This was created as an homage to the long-established Suehiro shop.
