Introduction
This is a recipe that recreates the chilled Ramen from Sakaeya Honten in Yamagata City, Yamagata Prefecture.
Sakaeya Honten 's chilled Ramen has a soup that has been chilled with ice, and has a strong, sharp flavor, with cucumbers adding a cool touch. They have made numerous improvements to the ramen to prevent the oil in the soup from solidifying even when it cools.
The soup is made with Katsuobushi and Kombu, and the subtle aroma of the broth whets the appetite. The soup has a Light taste impression overall, but Umami gradually spreads, resulting in a rich, full-bodied bowl.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Sakaeya Honten 's chilled Ramen.
How to make chilled Ramen at Sakaeya Honten
Ingredients from Sakaeya Honten
【soup】
- Water…30ℓ
- Beef bone …1kg
- [Commercial Use] Beef Clear Soup (CP-BC2)... 2kg
- Pears...300g
[Combined soup stock]
- 鰹節…50g
- Dashi Kombu... 5g
How Sakaeya Honten is made
- Boil Beef bone in boiling water for 2-3 minutes to Blood removal, then immediately remove and rinse under running water.
- Place the debled Beef bone in a pot and simmer over low heat for 3 hours.
- By carefully removing the scum that appears during the process, you can reduce strange odors and unpleasant flavors.
- Cook while breaking down the bones, and if the soup Evaporation and reduces during cooking, add water to make up for the loss and return it to the original amount.
- Once the bones have been broken down, reduce the heat to low and cook until the base of the flavor is achieved. [For commercial use] Add frozen beef clear soup (CP-BC2) and dissolve over low heat.
- Once the frozen soup has thawed and the flavors have blended well, the soup is ready.
- The soup is then cooled and the solidified Abura-shi on the surface is removed.

How to make it
- [For commercial use] Dissolve the beef clear soup (CP-BC2).
- In 2 liters of water, [For commercial use] Add one packet of bonito stock and simmer for 20 minutes.
- Boil pears in water to extract pear broth.
- Combine beef clear soup with bonito stock and pear stock.
- Pour the soup mixed with the seasoning into the warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
The founder of Sakaeya Honten founded in 1932, Mr. Abe, was inspired by a customer who said, "In the summer, I eat cold soba noodles, and I also want to eat cold Ramen." After a year of ingenuity, he launched Ramen in 1952.
It is said to be the first restaurant in Japan to create cold Ramen. Originally a soba restaurant, it is now better known as a Ramen restaurant.
