Introduction
This is a recipe that recreates the Goshogawara Shijimi Ramen from "Ganso Shijimi Ramen Wakayama," a restaurant representing Goshogawara City, Aomori Prefecture. "Ganso Shijimi Ramen Wakayama"'s Goshogawara Shijimi Ramen is Ramen made with Yamato Shijimi clams from Lake Jusanko. Yamato Shijimi clams are plump and have a strong umami Umami, and the soup is packed with clam extract! The soup has a gentle flavor, almost like clear soup, and Light taste yet rich with the clam broth, making it a soup you can gulp down in one gulp. This is the taste of the original Shijimi Ramen. This is a recipe that uses commercial Ramen soup to easily recreate the flavor of Goshogawara Shijimi Ramen from "Ganso Shijimi Ramen Wakayama."
How to make Wakayama Shijimi Ramen
Ingredients for Shijimi Ramen
・Water…1ℓ
・ [Commercial use] Chicken clear soup (CP-TC4)... 2kg
・Clams... 350g
・Dashi Kombu... 20g
How to make Shijimi Ramen
- Soak the dashi Kombu in water for half a day to make Kombu stock.
- Soak the clams in water to remove the sand, then wash them thoroughly by rubbing the shells together.
- Add clams to Kombu and simmer over medium heat for 2-3 hours.
- Once the clams have released their flavor, add the frozen commercial chicken clear soup, which forms the base of the flavor, and dissolve over low heat.
- Once the frozen soup has thawed and the flavors have blended well, it is ready.

- Clam broth...200g
- [For commercial use]"Wakayama" Replica Kaeshi...20g
- Medium-thin curly noodles...1 ball
- [For commercial use] Sukoburu Menma...appropriate amount
- Green onion...appropriate amount
- Shijimi clams...appropriate amount
- Wakame seaweed...appropriate amount
- Half a hard-boiled egg
How to make it
- [For commercial use] Dissolve the chicken clear soup (CP-TC4).
- Cook the clams in water for 20 minutes and extract the broth.
- Combine chicken clear soup and clam stock.
- Pour the sauce and soup into the warmed bowls.
- Add the noodles and toppings and it's done.

History and origins
It is said that the original Ramen shop, Wakayama, which opened as a drive-in near Lake Jusan in 1974, is the birthplace of this ramen. This Ramen is made with Yamato clams, a local specialty with a strong flavor, large grains, and high nutritional value. Larger clams have a deeper flavor and fuller taste than smaller ones. When frozen, clams become eight times tastier, so they would also make a good base soup for Ramen.
