How to make "Aji no Daio" curry Ramen

Introduction

This is a recipe that recreates Ramen from Aji no Daio ramen shop that is representative of Tomakomai and Muroran, Hokkaido. Aji no Daio is Ramen shop that originated in Tomakomai and Muroran, Hokkaido, and its "curry Ramen" is a popular Regional ramen. Its distinctive feature is the thick curry soup, similar to curry rice, created by mixing curry paste into a tonkotsu-based soup. This recipe uses commercial Ramen soup to easily recreate the flavor of Aji no Daio.

How to make "Aji no Daio" curry Ramen

Ingredients for Aji no Daio

[One serving]

• カレー粉…50g
• にんにく…5g
• 生姜…5g
• 玉ねぎ…50g
• Carrot…30g
• 1/4 apple
• salad oil...appropriate amount

How to make Aji no Daio

1. chopped chop Onion and Carrot, add Ginger and garlic, heat the salad oil and cook slowly over low heat.
2. When Onion start to turn caramelized, add the apples and curry powder and continue frying until done.

History and origins

It is said that Aji no Daio, founded in 1971, popularized curry Ramen in Muroran. Its origins can be traced back to Aji no Daio in Tomakomai, founded in 1965, where Koyanagi Hiroshi, who trained under the founder, Takahashi Ichiro, opened a branch of his Ramen shop in Muroran. Now, curry Ramen is served in more than half of the Ramen shops in Muroran.
Muroran is a port town of heavy chemical industry known as the city of steel, and as part of the town's revitalization efforts, it has a "Muroran Curry Ramen Association." The flavor is not standardized among member stores, and although Ramen is curry flavored, the appearance, cooking method, and taste vary from store to store.
