This is a recipe that recreates Hakodate Shoyu Ramen a local noodle that represents Hakodate City, Hokkaido. Most Hakodate Shoyu Ramen restaurants use pork bone broth. The soup is simmered slowly over low heat without boiling, resulting in a clear color and a refreshing taste. It has little odor, and with one bite, the Light taste flavor fills your mouth, with a gentle, fragrant dashi Ramen. This is a recipe that uses commercial Ramen soup to easily recreate the taste of Hakodate Shoyu Ramen, a local noodle.

How to make soup

  1. Add all the ingredients and simmer over low heat for 3 hours (be careful not to let the soup become cloudy).
  2. Once the ingredients have softened, add the [Commercial Use] Pork Clear Soup (CP-BC6), season and it's done.

Ingredients for the simmered fish

  • Char siu sauce...1 liter
  • Japanese-style soup stock…250ml

How to make the sauce

Mix the Abura-shi pork sauce and Japanese-style broth well and it's done.

*If it is not salty enough, adjust the taste with soy sauce or salt.

How to make it

  1. [For commercial use] Dissolve the pork clear soup (CP-BC6).
  2. Add Ginger, Carrot, and Onion to water and simmer for 30 minutes to make vegetable stock.
  3. Combine pork clear soup and vegetable stock.
  4. Pour the sauce and soup into the warmed bowls.
  5. Add the noodles and toppings and it's done.

History and origins

This is the second basic recipe for Hakodate Ramen, and it's Shoyu flavored. By not boiling, the scum is not released more than necessary, resulting in a refreshing flavor. Toppings include char siu (roasted pork, braised pork), bamboo shoots, chopped green onions, and homemade lard scraps. The sauce is made from Shoyu and Umami seasonings simmered with char siu (roasted pork, braised pork).
