・ Ginger... 30g
・Dashi Kombu (kombu seaweed)... 30g

How to make Mame-san

  1. Cook the ingredients over low heat just before boiling for 3 hours.
  2. Once the ingredients have broken down, add the [Commercial Use] Pork Clear Soup (CP-BC6) to adjust the base flavor and it's done.

How to make it

  1. Dissolve the [Commercial Use] Pork Clear Soup Soup and [Commercial Use] Chicken Clear Soup Soup (CP-TC4).
  2. Add green onions, Onion, Carrot, and Ginger to the water and simmer for 30 minutes to make vegetable stock.
  3. Combine pork clear soup, chicken clear soup, and vegetable stock.
  4. Pour the soup mixed with the seasoning into the warmed bowl.
  5. Add the noodles and toppings and it's done.

History and origins

Hakodate Ramen is characterized by its clear, transparent soup (also known as clear soup or chintan soup). The flavored oil is made from chopped back fat that has been fried until crispy. Some restaurants, such as Mame-san, serve this ramen. The pepper on the table complements Ramen perfectly.
The first time the words "Chinese noodles" appeared in print in a newspaper advertisement for Yowaken in 1884, 26 years before Shina Soba appeared in Tokyo. Hakodate flourished as an international trading port alongside Yokohama and Nagasaki in 1854, and foreign culture began to flow in early on. It is said that Chinese restaurants had already opened in 1877, and it was mainly Cantonese Chinese who came to buy seafood and eat there. They were probably eating noodle dishes.
