Introduction

Aji no Sanpei 's Sapporo Miso Ramen is known as the birthplace of Sapporo Miso Ramen, and is a long-established Ramen shop frequented by fans from all over the country.
Its soup is lighter in color than regular Miso Ramen, and has a clear appearance, but one bite and you can really taste Miso. When eating, you should mix it well from the bottom. As you eat, the flavor of Miso and Garlic will come through, and you will feel Umami more and more, making it an addictive taste.
The owner at the time, Omiya Morito, believed that "Miso is good for your health," and this Ramen was developed based on the idea of Miso. This is a long-established Ramen shop that you should definitely visit at least once.

Ingredients for Aji no Sanpei

・水・・・10ℓ
・げんこつ(豚ゲンコツ)・・・3kg
・鶏ガラ・・・1kg
【業務用】鶏豚白湯スープ(CP-M6)・・・4kg
・リンゴ・・・1個
・玉ねぎ・・・200g

How to make Aji no Sanpei

  1. 寸胴に材料を加え、約2時間中火で煮込む。
  2. 材料が崩れて来たところで、【業務用】鶏豚白湯スープ(CP-M6)を入れて、味を安定させたら完成。

材料(1杯分)

How to make it

  1. 【業務用】鶏豚白湯スープ(CP-M6)【業務用】豚清湯スープ(CP-BC6)を溶かす。
  2. 水にネギ、玉ねぎ、りんごを入れて30分煮込んで、野菜出汁を作る。
  3. 動物系スープと野菜出汁を合わせる。
  4. 温めた丼に、かえしと合わせたスープを注ぐ。
  5. 麺と、トッピングを盛り付けたら完成。

History and origins

Aoba was founded in 1947 by Yoshiya Murayama, who returned from Manchuria, and started out as a food stall. This recipe was created based on the original recipe from the restaurant's founding, and is used for both Shoyu sauce and salt flavors. Along with Hachiya, it is said to be one of the original Asahikawa Ramen. Until around 1960, the Miso soup was made with only chicken bones, Onion, green onions, and carrots. All flavors were covered in hot lard, which warmed everyone's bodies in the cold Asahikawa.
