This is an introduction to a recipe that recreates Kawakami Ramen from Kui-dokoro Akashi, a restaurant that represents Asahikawa City, Hokkaido.
Kawakami Ramen at Kui-dokoro Akashi is the signature dish at Kui-dokoro Akashi in Hokkaido, and is a Ramen dish called "Miton Ramen" that comes with a large slice of pork belly roasted pork, so much so that it spills out of the bowl.
The soup is a clear Pork bone broth with a seafood flavor, combined with a refreshing Shoyu flavor and chewy Ramen resulting in a gentle flavor.
Ramen has been loved by locals for many years, with a mild-tasting soup that you will never get tired of, no matter how many times you eat it.
This is a recipe that uses commercial Ramen soup to easily recreate the taste of Kawakami Ramen from Kui-dokoro Akashi.
How to make Kawakami Ramen at "Kui-dokoro Akashi"
Ingredients for Kui-dokoro Akashi
- Water...10 liters
- Pork knuckles...1kg
- [Commercial Use] Pork Clear Soup (CP-BC6)... 3kg
- Onion...200g
- Garlic... 5 cloves
- 100g Ginger
- Katsuobushi...200g
- Dashi Kombu...10g
How to make Kui-dokoro Akashi
- Boil the pork knuckles and water over high heat, and remove any scum that appears.
- Add the other ingredients and cook over medium heat for 2 hours.
- The base of the flavor is added to the cooked soup. [For commercial use] Add the pork clear soup (CP-BC6) to deepen the flavor and it's done.

- Medium-thin noodles...1 ball
- [For commercial use] Pork belly chashu...appropriate amount
- Naruto...1 piece
- [For commercial use] Extra thick bamboo shoots...appropriate amount
- Green onion...appropriate amount
How to make it
- [For commercial use] Dissolve the pork clear soup (CP-BC6).
- Add one packet of [Commercial Use] Bonito Stock to 2 liters of water and boil for 20 minutes.
- Combine pork soup and dashi soup.
- Pour the soup mixed with the seasoning into the warmed bowl.
- Add the noodles and toppings and it's done.

History and origins
Kamikawa Ramen began with Kui-dokoro Akashi, which was founded in 1934, and there are now over 10 Ramen shops for a population of 3,500. Some shops have over 200 customers per day, making it a Ramen town known only to those in the know. Near Kamikawa Town is Asahikawa City, home of Asahikawa Ramen, which often has only pork bone (tonkotsu) broth, while Kamikawa Ramen comes in a variety of flavors, including Shoyu Ramen, salt Ramen, and Miso Ramen. There is also the Kamikawa Ramen No. 1 Japan Association, whose charter is listed below.
